Healthy Cherry & Coconut Hot Fudge Sundae with a Green Twist

This healthy Cherry and Coconut Hot Fudge Sundae with a Green Twist is not only exceptionally healthy with no added sugar or sweeteners but it actually contains spinach and still tastes amazing.



  • 1 Cup Coconut Milk (You could make this a raw recipe by using young Thai Coconut meat with coconut water)
  • 1 Cup Dates (I used Halawi but you can use any type of dates)
  • ½ Packed Cup Spinach
  • 1 teaspoon Vanilla (I use ground vanilla)
Ice Cream
  • 1 Cup Frozen Pitted Cherries (or any other frozen berries)
  • 2 Cups Frozen Banana Chunks (About 2 large bananas)
  • ¼ Cup Coconut Milk
  • 1 teaspoon Vanilla (I use ground vanilla)
  • 4 dates or 4 Tablespoons of date syrup or other healthy sweetener. I used date syrup (Soak 6 mejool dates in ½ cup water for at least 24 hours stirring a couple of times)
  • 1 T desiccated/ shredded coconut
  • 915 pitted cherries or other fruit (fresh or frozen)


  1. Make the sauce first. Blend all the sauce ingredients together until they have gone smooth and warm. Put this to one side and wash out your blender.
  2. Now blend all the ice cream ingredients together. I like to do this slowly with a tamper in my vitamix, and a blentec is also a good high speed blender to make ice cream in. If you don’t have a high speed blender you can either try making this in a food processor or add a bit more coconut milk and stop to scrape the sides down frequently. Your ice cream may be more runny but it doesn’t matter as it will still taste lovely.
  3. Pour some sauce into the bottom of the bowls or glasses followed by some ice cream. Top it off with some more sauce then sprinkle some cherries and shredded coconut on the top.
