Method
- Make the sauce first. Blend all the sauce ingredients together until they have gone smooth and warm. Put this to one side and wash out your blender.
- Now blend all the ice cream ingredients together. I like to do this slowly with a tamper in my vitamix, and a blentec is also a good high speed blender to make ice cream in. If you don’t have a high speed blender you can either try making this in a food processor or add a bit more coconut milk and stop to scrape the sides down frequently. Your ice cream may be more runny but it doesn’t matter as it will still taste lovely.
- Pour some sauce into the bottom of the bowls or glasses followed by some ice cream. Top it off with some more sauce then sprinkle some cherries and shredded coconut on the top.
