If you are using frozen mango, either leave it to defrost or add it to a small saucepan on a low heat and simmer until it has defrosted.
Add all of the ingredients to a blender and blender for 1 minute or until smooth. Alternatively, you could use a hand blender.
Pour the curry sauce into a small saucepan and simmer on a low heat for 4-5 minutes.
Transfer to a large glass jar or other sealed container and store in the fridge for up to 5 days.
Or transfer to a large ice cube tray or other small pots and freeze in small portions. When you want to use a portion of sweet curry sauce, either defrost it for 2-6 hours before use or warm it up gently in a small pan on the stove before use.
