Ingredients
  

  • 4 cups of chopped mango chunks fresh or frozen / 500 grams
  • 1/2 cup of raw honey or maple syrup
  • 1 teaspoon raw apple cider vinegar
  • 2 teaspoons sea salt
  • 2 tablespoons tomato paste / puree
  • 1 tablespoon lemon juice / juice from half a small lemon
  • 2-3 teaspoons of curry powder to taste. I used 3.
  • 2 teaspoons onion powder
  • 1 teaspoon ground coriander
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Method
 

  1. If you are using frozen mango, either leave it to defrost or add it to a small saucepan on a low heat and simmer until it has defrosted.
  2. Add all of the ingredients to a blender and blender for 1 minute or until smooth. Alternatively, you could use a hand blender.
  3. Pour the curry sauce into a small saucepan and simmer on a low heat for 4-5 minutes.
  4. Transfer to a large glass jar or other sealed container and store in the fridge for up to 5 days.
  5. Or transfer to a large ice cube tray or other small pots and freeze in small portions. When you want to use a portion of sweet curry sauce, either defrost it for 2-6 hours before use or warm it up gently in a small pan on the stove before use.
