Cucumber Lassi Complete Meal Green Thickie

Ingredients
  

  • 1 cups water
  • 3 cups of chopped cucumber
  • 2 cups spinach
  • 2 avocados
  • ¼ cup chia seeds
  • Pinch of himalayan or sea salt
  • 1 teaspoon of chopped fresh coriander/cilantro
  • 1 teaspoon of chopped fresh mint
  • ½ teaspoon of fresh ginger
  • ½ teaspoon of ground cumin
  • Juice of 1 lemon
  • 1 cup of ice optional to cool down the smoothie

Method
 

  1. Blend all ingredients until smooth (about 2 minutes)
  2. Drink straight away or cover and refrigerate
  3. Keeps for 3 days in the fridge
  4. Add some cayenne pepper and cucumber as a topping if desired
