Hi everyone! I’m Claire from Almost Skinny Vegan Food. You may have seen me contributing to Healthy Vegan Fridays, but if not it’s very nice to meet you. After one hell of a case of Monday-itus imagine my delight when I received a friendly email from Katherine offering me the chance to do a guest post for her while she was delivering a little love bundle into the world.
I’ve been drooling over the wonderful world of green thickies for yonks now but it’s only recently I managed to snag myself a second hand vitamix and join in the fun! I did try them in my conventional blender but… I ended up chewing them and did a wonderful shrek impression with the amount that remained in my teeth! I ended up juicing my greens, freezing them into ice blocks and adding them to my smoothies (or just juicing) so if you’re lacking a high powered blender you can always give that a go. So, where did I start? with greens of course! then I worked out how I wanted to sweeten it, whether I wanted it to be creamy or not. I’m not sure I have a fave green smoothie yet but this one is definitely new and interesting. I decided to share a refreshing citrus and capsicum green smoothie with you today.
Citrus and Capsicum Green Smoothie

Citrus and Capsicum Green Smoothie
Ingredients
- 2 small cucumbers or 1 large
- 1 medium cos lettuce or any lettuce you like
- 2 cups red/orange/yellow baby capsicums bell peppers
- 3 oranges Alternatively if you’re a grapefruit fan: 1 large ruby grapefruit & 1 orange *Any citrus would work well here with the exception of lemon
- Feel free to adjust sweetness to your liking with stevia or a couple of dried dates
Instructions
- Wash all fruit and veggies well
- Peel citrus fruit and take the stems off capsicums (I leave the seeds in)
- Add to high powered blender
- Blend until smooth
- Enjoy!
