Chickpea Salad Recipe

Chickpea Salad from Gluten Free Vegetarian

I made this Chickpea Salad this morning and it only took me 6 minutes to make this recipe.  That makes it a perfect lunch or quick weekday meal.  I adored the way the citrus and herbs made this taste incredibly fresh.  This is definitely going to be one of my staples from now on.

Chickpea Salad

Ingredients

  • 2 Cups of Chickpeas
  • 1/4 Cup of Lemon Juice
  • 1 Tablespoon of Olive Oil
  • 1 Tablespoon of fresh chopped Cilantro/ Coriander
  • 1/2 Avocado chopped
  • 1/2 Tomato chopped
  • Salt to taste – I used 1/4 teaspoon
  • Pepper to taste- I used 1/8 teaspoon

Mix everything together and enjoy!
