Hello, it’s Friday already, yay! It’s really starting to feel like spring here. The sunshine is lifting my mood and although it’s still really cold I don’t mind too much as I’m heavily pregnant now would prefer it cooler rather than baking hot.
I’ve still not been making many new recipes as I’ve still not had the energy but I’m on a mission to save money at the moment and clear out my freezer of old food before the baby arrives so I can make more useful quick meals for that time. So I’ve been eating up a lot of old batches and there are loads of them, weeks worth. It’s surprising how quickly your freezers can be stacked full of homemade food if you don’t keep a regular check on it. Anyway, it’s good I don’t have to make much from scratch at the moment. I think I’ll just make a lot of pasta sauces for when the baby arrives. Let me know if you have any ideas for quick healthy meals that can easily be kept in the freezer.
I just love Healthy Vegan Fridays. I say to myself, I really need to find a particular recipe, and then it appears right on my blog with such perfect timing! This week I wanted to find a healthy easter egg recipe for my toddler and I made Gabby’s Peanut Butter & Caramel Filled Chocolate Eggs which were absolutely gorgeous. I wrapped them in foil and hid them in easy to find places which was so much fun. This was the first time we also gave our little girl shop bought chocolate made with sugar, and she actually preferred Gabby’s Eggs and wanted ‘more more more’!
I of course overindulged in sugary chocolate and ended up wired all night and ill all the next day. I guess I still haven’t learnt how to eat sugar in moderation. I guess I’m just a sugar addict and I probably should just accept it’s not something I’m ever going to be able to have in moderation. Still we had a lovely Easter. I hope you did too. Do you manage to stay healthy over Easter or do you indulge a bit too much too?
