Basic Green Thickie Recipe

Welcome to Healthy Vegan Fridays!

It was my birthday this week, and I got to go out for dinner alone with my husband which was a rare treat as we’ve only had a babysitter twice since my toddler was born.  We went for a gorgeous Turkish meal.  I’ve never had such good tasting food.  I really wish I could cook with such flavour.

Even though I’ve been exhausted towards the end of my pregnancy, my iron levels have risen to just below the normal range now and if I do get a very rare good night sleep I actually feel pretty good the next day.  As I’ve still lost my taste for too many greens, a lot of my friends have now been trying Green Thickies and telling me how nice they are and how good they feel after having them which is encouraging for me.  I can’t wait to get back to really healthy eating once the baby is born as I’ve started to noticeably put on a fair bit of extra weight too but I know I’ll have no problem losing it when I get back to fruit and veg based eating.

There are only 2 ways I like to eat Kale, in a smoothie (Green Thickie) or as Kale Chips.  My kale chips have been a bit hit and miss in the past but I have free kale growing in my garden so I just have to try this new technique and see if I can finally master kale chips in the oven.  If you’ve never tried them you really are missing out!
