Can you believe I’ve never ever had an ice cream sundae in my life? So entering an ice cream sundae competition was quite a challenge. I wasn’t expecting much but this healthy Cherry & Coconut Hot Fudge Sundae with a Green Twist really blew me away. I couldn’t believe something so healthy could taste so delightful. I don’t usually post on a Sunday but how perfect to post my first Sundae recipe on a Sunday.
Ice Cream Sundae Challenge
I have just started reading Sweetly Raw blog noticed a challenge to enter a vegan ice cream sundae competition. I have recently started making fruit ice cream and lately some Green Ice Cream, so I thought this sounded like a great idea to push me out of my comfort zone. [pinit] There was one problem: I had never tasted an ice cream sundae before. Can you believe that? I think it’s probably something to do with the fact that for over 10 years of my life I ate nothing but cereal, beans on toast and chocolate bars every single day. I had no interest in food and no interest in sundaes. How things change. Now I absolutely love my food, love trying new flavours and combinations but the problem is that I’m a vegan. So unless I make a new dish myself, I just won’t end up trying anything new as there are no vegan restaurants where I live. So I thought it was high time I made my very first ice cream sundae ever.How to make an ice cream sundae
[pinit] I didn’t even know what an ice cream sundae was supposed to look like or how it was made up, so had to do a bit of research. What I discovered was an ice cream sundae is generally just ice cream in a bowl with a topping.So that sounded pretty simple, and what I’ve come up with is definitely very simple so it’s very easy for you to recreate yourself. Granted it’s more complicated than a smoothie, but you really will be able to whip this up in no time at all.
The best part of this Hot Fudge Sundae is that it’s so healthy. It’s made entirely from whole fruits and coconut. You will be able to find the ingredients easily and it actually tastes absolutely amazing. I really didn’t expect it to taste so good but I ended up eating 2 of these large sundaes last night. Yum!
How to make a healthy ice cream sundae
The best part of this Hot Fudge Sundae is yet to come. It actually contains spinach. Now if you’ve been following my blog for a while this won’t come as a shock to you, as my website is called Green Thickies. I make healthy filling thick green smoothies. I like to put greens in everything. Why? Because they make you feel absolutely amazing and if you can get over the colour, you can’t actually taste spinach in a sweet dish. I set myself a challenge of trying to add leafy greens to every single one of my meals. Once I started doing that it had such a big impact on my health. My cravings went away and I started actually desiring more and more greens and fruit. I urge you to try this for a week and see how much better you feel.
Healthy Cherry & Coconut Hot Fudge Sundae with a Green Twist
[pinit] The sweet, cold and slightly tart cherry and coconut ice cream is perfectly balanced with this hot, sticky fudge sauce. The coconut and cherries on top give it a nice crunch. The spinach is hidden in the fudge sauce, but you’d never know it apart from this vibrant green colour which contrasts with the pink ice cream brilliantly.
If you want a quick, healthy guilt free sundae that your kids will also love, this sundae is hard to beat.
Quick, grab some cherries while they are still in season, freeze them along with some bananas for a day before you make this smoothie. If you can buy frozen cherries, this is the easiest option. Or if you can’t get hold of cherries at all, you can use any other frozen fruit. It will work with any other type of berries.
Date Syrup
For ice cream I also made date syrup for the first time. This is such a simple but clever idea. I’m going to refer to date syrup much more often in the future so I’m posting a recipe for date syrup separately.

This healthy Cherry and Coconut Hot Fudge Sundae with a Green Twist is not only exceptionally healthy with no added sugar or sweeteners but it actually contains spinach and still tastes amazing.
Ingredients
- 1 Cup Coconut Milk (You could make this a raw recipe by using young Thai Coconut meat with coconut water)
- 1 Cup Dates (I used Halawi but you can use any type of dates)
- ½ Packed Cup Spinach
- 1 teaspoon Vanilla (I use ground vanilla)
- 1 Cup Frozen Pitted Cherries (or any other frozen berries)
- 2 Cups Frozen Banana Chunks (About 2 large bananas)
- ¼ Cup Coconut Milk
- 1 teaspoon Vanilla (I use ground vanilla)
- 4 dates or 4 Tablespoons of date syrup or other healthy sweetener. I used date syrup (Soak 6 mejool dates in ½ cup water for at least 24 hours stirring a couple of times)
- 1 T desiccated/ shredded coconut
- 9-15 pitted cherries or other fruit (fresh or frozen)
Instructions
- Make the sauce first. Blend all the sauce ingredients together until they have gone smooth and warm. Put this to one side and wash out your blender.
- Now blend all the ice cream ingredients together. I like to do this slowly with a tamper in my vitamix, and a blentec is also a good high speed blender to make ice cream in. If you don’t have a high speed blender you can either try making this in a food processor or add a bit more coconut milk and stop to scrape the sides down frequently. Your ice cream may be more runny but it doesn’t matter as it will still taste lovely.
- Pour some sauce into the bottom of the bowls or glasses followed by some ice cream. Top it off with some more sauce then sprinkle some cherries and shredded coconut on the top.

Ha ha, thank you. Yes I wish I had one right now too but don’t have the ingredients in. I should really prepare this in advance so I can have one when I’m craving something sweet. It kept really well for 24 hours in the fridge too. It had melted a bit but the ingredients all stayed separate and it was still gorgeous.

What a deliciously healthy sundae! I do love traditional sundaes but rarely eat them…only as a very special treat. My absolute favourite is butterscotch – but your cherry coconut hot fudge sundae would suit me just fine!
Yes it’s amazing how healthy you can make your favourite snacks. It all just requires more work though as you have to make everything from scratch. This sundae really didn’t take long at all though. When my baby’s older I’m going to make this for her for a special treat, even though it’s healthy enough to be eaten every day!
If I wanted to add cocoa/cacao into the fudge sauce how much would you suggest?
Hi, I’ve not tried it with cocoa powder but you could try maybe a tablespoon and taste it and add more if you need it?
Finally made this but used dried fruit instead of dates and pure maple syrup instead of dates/date syrup.
I also added chocolate chips and raw almonds instead of coconut and cherries or other fruit for topping. Added great texture and since I am not following a restricted diet the chocolate chips were a treat that went well with the cherry ice cream.
Loved it!
