Welcome again to Healthy Vegan Fridays. I love the recipes that you share each week. Last week I made Nacho cheese white bean spread which had been shared on the blog hop last week. It was gorgeous and went perfectly on my quesadillas with tomato that I made over the weekend. I keep meaning to make more recipes shared but I’m in the process of eating all my freezer batches that have been in there for ages to make way for some new quick meal batches for after the baby is born. This week I’ve been busy making a vegan cheese sauce, tomato sauce and pesto for pasta, and a mushroom chili so far.
I’ve also been busy getting organised for my Living Below the Line project that begins on Monday.
I’m going to be living below the poverty line making meals that cost less than £1/ $1.50 dollars per day! It seems extreme doesn’t it but I have actually prepared quite a tempting menu for the week and was fine tuning the details and recipes today. I’m usually fairly organised with my meals, but eating so cheaply requires so much extra planning. I have to make sure that everything is actually ready when it needs to be eaten as I can’t substitute any of the meals. I have to make sure everything is unprocessed as that’s the only way I like to eat and ensure it’s actually going to taste good and my toddler and husband aren’t going to be revolted by the options. It also has to be a balanced vegan diet that is not lacking on calories as I’m pregnant and I don’t want the rest of my family to go hungry either.
I’ll be doing this for 5 days. I am planning to blog every day to let you know how I get on with it starting on Monday, but my energy can still be lacking these days so apologies if I end up publishing my blogs later than planned, but that is what I intend to do anyway. My Favourites from Last Week
I’ve been looking for a good soup recipe that I can make as a freezer batch for when my baby is born, and this looks gorgeous with all my favourite flavours!
Mmmm, I adore Indian food and haven’t seen a recipe for pakoras yet that haven’t been deep fried. These are so healthy and look even better than the standard version.
I adore radishes and the dressing seems similar to one I keep coming back to lately too so I’m going to have to give this a go!
